About the LPET Special Anaerobic Lactic Fermentation Process The Special Anaerobic Lactic Fermentation method (Lactic Fermentation) is a signature processing technique used by La Palma & El Tucan Estate. It is done without any added external substances, controlling temperature, pH, and time through an anaerobic process to achieve higher concentrations of lactic bacteria during fermentation. The estate ferments the carbohydrates in the fruit pulp mucilage to produce an ideal cup profile with "full-bodied," "sweet," "wine-like acidity," and "silky" layers of flavor.
La Palma y El Tucán (LPET) was founded around 2011 by a passionate team of a crazy scientist, enthusiastic founders, dedicated farmers, and gifted artists! One of the founders, Felipe, has been involved in specialty coffee for over ten years. He previously operated green coffee trade in the U.S. before deciding to return to Colombia around 2010 to contribute to the revolution of the specialty coffee industry in his homeland. The beautiful Elisa, perhaps romantically inspired by falling in love with Felipe, also fell in love with coffee and joined this magical journey. It’s evident that the estate's logo and theme colors were designed by Elisa herself. After visiting the estate, you'll discover that even the ladders are a crazy shade of pink! Carlos, the crazy and dedicated scientist, is an old friend of Felipe in the specialty coffee industry. Upon hearing about this project, he immediately threw himself into it without hesitation.
La Palma y El Tucán is a wonderfully romantic and magical combination. Unlike traditional coffee producers, the founders did not inherit any coffee estates from the previous generation. Instead, they sought out their ideal coffee-growing environment (Ecotopo) from scratch. After visiting over a hundred estates, they finally purchased 18 hectares of land in the Cundinamarca region, located an hour and a half's drive from Bogotá, at an altitude of 1,600–1,800 meters on the eastern slopes of the Andes. This marked the beginning of their production plan.
La Palma y El Tucán’s community crop program (Neighbor & Crops) is somewhat like a social program designed to help and educate local small farmers to increase their income, enabling them to witness the improvement of smallholder coffee quality and living standards, which is very meaningful. The estate collaborates with nearby small farmers by offering various incentives (both monetary and non-monetary, including guaranteed price purchases), motivating them to produce high-quality coffee. LPET follows a strict quality control process, selecting only flawless cherries, and employs experimental processing methods different from traditional ones to create unique micro-batch coffees.
